News from ENSS: Culinary Dual Credit Program

ENSS Students in the Spirit

The Dual Credit Culinary students from East Northumberland Secondary School (ENSS) have been practising their skills these past few weeks in anticipation of the Christmas season that is fast approaching. Under the guidance of their teacher Mr. Richard Turner and the Loyalist College professor Chef Pat Forster, the modern kitchen facility has been transformed into Santa’s workshop. Nineteen avid baking students have been working as a team to produce a gingerbread house in the likes of Brighton’s very own lighthouse at Presqu’ile Point.

Their newly acquired baking skills have been put to the test in constructing the three dimensional structure which will be showcased at ENSS for all to see.

Chef Pat, as referred to by her students, challenged the students to create the lighthouse as part of their course requirements in the Techniques of Baking Culinary Management course. “Creating a project like this calls upon many skills from scaling ingredients to dough making to piping icing," she said, “and besides they have fun while learning which is the best combination.”

Loyalist College in partnership with ENSS offer dual credit programs such as this in order to inspire students to look beyond high school at the vast array of trade skills being offered to young people today.
