Loyalist Students Make Dining Out – and in – a Treat

The fall semester is underway which means the community can once again enjoy the delicious creations of the Culinary students at Loyalist. Whether it’s lunch or dinner in the on-campus Club 213 dining room, or a visit to The Market where a delightful variety of take-home dinners and treats are available — visitors soon discover why the college is proud to showcase the students’ talents.

“Customers can enjoy a fantastic meal at affordable prices and by doing so are providing students with invaluable learning experiences,” said Margaret Beaumaster, Culinary professor. “The meals are prepared by the first and second-year students under the supervision of the Chef. The second-year students act as station chefs, working with the first-year students. Our students are interested in becoming chefs one day so it is important that their learning experience includes serving customers. They gain an appreciation for that side of the business through customer feedback — be it compliments or questions.”

Recently a group of second-year students described how they benefit from the opportunities provided through Club 213 and The Market.

“I’m learning to communicate with my customers better by answering their questions about how I prepare the food and the ingredients I use.” — Joana Ang

“By serving customers I am gaining a clearer perspective, and respect for the responsibilities of dining room staff — making me a better team player.” — Emileigh Kozdas

“We rotate our responsibilities in The Market — two weeks production and two weeks sales. It’s a good way to learn what people like and why, and then apply what we’ve learned in our food preparation.” — Valerie James

“People are always so busy. The Market offers an ideal opportunity for people to pop by and get a delicious take-home meal. It’s great for us too. We’re doing the advertising and food displays plus enjoying the positive boost of customers telling us how much they love the food.” — Cassandra Ashford

“The best part of our course is the camaraderie. We’ve really learned to work together and it’s a great feeling to know that we’re part of a team.” — Lee Patterson

The Market is open Thursdays and Fridays from 10:00 a.m. until 1:30 p.m. Guests are welcome to make reservations in the Club 213 dining room, for lunches and dinners, Wednesday to Friday, including the Friday buffet luncheon. Gift certificates are available and can be used in either Club 213 or The Market. Once again Club 213 is offering the Dinner Club, a wonderful three-meal package — with each evening featuring a four-course meal.
